Any of Master Wong's videos qualify as Not Safe for Work, or at least should have the volume muted. With the volume on, I find him highly entertaining, and watch his videos regularly.
On intercepting flying fists with elbows, boxing gloves make it seem easy. A naked fist is a smaller target. Rather than expecting that I myself could pull off such a feat from a very low guard, I'd prefer to keep a hands-up, peek-a-boo style guard. This way your head is passively protected from hooks, as well as straight punches. Also, you can very easily point your elbows forward to meet the straight punch, or use your free hand to direct the punch to your elbow. No doubt, this will remind you of any instances of elbow slapping in kata.
Btw, every now and then, Master Wong gives free lessons in a park, for you folks in the UK. On the use of elbows against a boxer, I favor an approach like this as it is easy to integrate from an oh sh*t panic type guard.

In Panantukan the explanation for elbows as a guard is due to the way one would hold knives in the hands. So the punch is actually intercepted with the knife rather than the elbow. Although not sure why someone would punch willingly in to someone wielding knives.
On a side note, we've been experimenting with double blocking to get position and it's quite difficult in a live sparring setting. I like the parry and elbow spike, or swim in and elbow. Parry and elbow because the cross is loaded.

I found it interesting as I had actually never thought of blocking punches like that... as meguro says it will be a lot easier with 16oz gloves.... but I think I need to try it out to satisfy my curiosity!
