Hey, do we have a recipes thread? If not, here's one! I'll start with something I made up this past weekend. It came out INCREDIBLY GOOD!
Butternut bacon apple bake
You will need:
1.5 stick butter
1 tbsp honey
1 small butternut squash
1 medium to large sweet onion
3 tart green apples, or whatever apple you prefer EXCEPT for red delicious. Red delicious apples SUCK.
1/2 pound bacon. I prefer thick sliced and peppered.
nutmeg
cinnamon
cardamom
2 tbsp brown sugar
ground black pepper to taste
1 splash of Worcestershire sauce
FIRST:
Preheat oven to 375
Cut the squash in half. Fill a baking pan halfway up with water. Put the squash in the water, hollow side up. Divide half a stick of butter between the squash halves. Put one tablespoon of brown sugar on each side. Sprinkle generously with cinnamon, nutmeg, and cardamom.
Bake in oven for eh, a half an hour, until it is cooked a bit. Doesn't need to be completely cooked.
Let it cool to the point of being easy to handle. Lift out of the pan without spilling.
Pour the water out of the pan.
Pour all the good liquidy stuff from the squash halves into the pan.
Dice the squash up into half inch or so cubes.
Core the apples, and cut up into quarter inch or so cubes.
Put in the pan and set aside with another half stick of diced up butter.
Dice onions up into half inch pieces. Put in skillet, medium heat, with half stick butter.
Dice bacon up into half inch pieces. Add to skillet. Grind up black pepper to taste in skillet.
Cook onions and bacon until onions are mostly transparent.
Turn heat up to medium high.
Splash in Worcestershire sauce.
Cool until there's a bit of browning on the onions.
Pour contents of skillet into pan with apples and squash.
Mix it all up!
Liberally sprinkle cinnamon on top. Lightly sprinkle nutmeg and cardamom.
Drizzle honey over it all.
Put back in oven, bake for 1/2 hour.
Take out of oven, turn the mix over in the pan so the bottom bits are on top.
Put back in oven, back for another 1/2 hour.
Pull out a big tray of awesomeness!
